We have had a full house at Andros South the past couple months. No doubt these guests have experienced some unbelievable bonefishing and mouthwatering seafood. South Andros is one of the most pristine islands in the Bahamas and surrounded by unspoiled marine life. This means you will have plenty of fresh seafood accompanying your fishing. While the dinner menus vary based on what fish are being caught, we can pretty much guarantee you will be enjoying some conch salad served ceviche style at some point during your trip. Below is the simple recipe for this favorite appetizer.
- Fresh conch (fresh means harvested today)
- Onion
- Sweet pepper
- Tomato
- Hot pepper
- Lime juice
- Orange juice
Chop up the conch. Chop up the vegetables. Mix in the juices. Serve with a rum drink. Enjoy!
