At BC West we plant a small vegetable and herb garden in raised beds surrounded by a wooden fence to keep out bears, deer and other wildlife that try to sample our fresh produce before we can get it into the kitchen! We love to use fresh herbs to flavor and garnish our really good gourmet fare. Some of our favorite herbs that you’ll find growing in our garden are mint, basil, rosemary, thyme, chives and tarragon.
Due to the short growing season at the Dean we are limited to what seeds we can plant and we keep our fingers crossed that we will get the right amount of sunshine and rain to grow our vegetables. Fortunately, our backyard has an abundance of wild berries such as black and red raspberries, blackberries and blueberries that we can pick for our desserts and salads.
Last season we also constructed new flower beds. We planted over 200 bedding plants. The gardens were beautiful and full of color against the backdrop of green from the surrounding forest and buildings. Each week we gather flowers and branches to make a new centerpiece for our dining room table and we love to use flowers to decorate many of our dishes.
There’s nothing wrong with a little class in the middle of the woods, right?
